Bottoms Up

Lots of places are pouring inaugural and Obama-themed cocktails this week. Here are two, made with Domaine de Canton, that you can shake up at home.

Spiced Pear-a-dise
(Served at TenPenh for Oprah's inaugural party.)
1 oz. Goslings Black Seal Rum
1/2 oz. Domaine de Canton Ginger Liqueur
3 oz. warm pear cider

Build the drink directly in a warm martini glass. Add all above ingredients and garnish with an Asian pear tuille and cinnamon foam.

The Yes We Canton
(Served at the World Peace Inaugural Ball with guests Joan Baez and Crosby, Stills, Nash & Young entertaining at the event.)

1/2 oz of pineapple juice
1/2 oz Domaine de Canton
2 oz of Champagne or sparkling wine
Fresh pineapple to garnish

In a champagne flute, pour the Domaine de Canton, pineapple juice, and the top with Champagne, and garnish with a pineapple wedge.

Bottoms Up, a semi-regular feature, appears when life calls for a drink.
